  • A large carrot (peeled)
  • zucchini
  • sprouts, such as alfalfa or radish
  • cilantro leaves
  • fresh mint leaves

For the dressing:

  • vegetable oil
  • Fish sauce
  • Lime juice
  • Brown sugar
  • A small clove of garlic (grated or minced)
  • 1 Thai bird chile, thinly sliced

How to make it:

  • To mellow the bite of onion, slice them up and soak them in cold water
  • Julienne the carrot and zucchini on a mandoline
  • Put them in a large bowl, add sliced and soaked online slices

  • 1 big or 2 medium zucchini
  • Few dried prunes
  • 1 tomato
  • Few nuts
  • Dried coriander
  • Pepper

  • Cut the zucchini(s) into small square shapes
